What you'll learn in this chocolate class:

Treat yourself to sweets while learning the classic art of truffle making!

We begin with a guided tasting where we serve a bit of sparkling wine as a palate cleanser and welcome drink.

Highlights of this portion:
  • discussing and showing how chocolate is made 
  • guided tasting of cacao bean, nibs and chocolate made with the same beans
  • tasting a dark chocolate bon-bon made with our own direct trade chocolate from Belize
  • exploring a few other cacao growing regions and tasting samples of chocolates from these countries
  • discussion of direct trade and single origin chocolate vs. commercial chocolate and commodity cacao
  • telling the stories of the farmers we work with in Belize and the local folks learning the craft of chocolate making
  • fielding questions from guests who want to delve into a particular aspect of chocolate more deeply
  • talking about the health benefits of eating dark chocolate and cacao
Next we head to the kitchen for the two hands-on portions. First guests make a box of a dozen chocolate truffles, hand-rolling and finishing them in a variety of toppings. The students are so proud of what they've created and the boxed truffles are a lovely take home!

Finally everyone makes a batch of fresh chocolate ganache to master that basic technique which they also take home to play with another day (or just eat out of the container with a spoon!!)

Minimum age to attend the class is 10 and must be accompanied by adult.

Please wear comfortable clothing -- not your fanciest please, and sensible shoes (you will be on your feet for most of the class).

Hello, I want to know if you will teach how to make truffles with nut butter fillings. I came across a brand and love it and want to make my own at home. I am happy to bring along a jar of nut butter with me :-)

Hi, our public classes are already programmed with what we will make so it won’t be possible to incorporate something different on the fly. Also since other students my have nut allergies we don’t want that possible exposure. You can try googling a recipe for “buckeyes” & substituting your nut butter of choice for the usual peanut butter called for in the recipe. Happy experimenting!

Can I bring my own ingredients?

For what purpose? Are you dairy free? We prepare some ganache the day before so it will be set up enough to work with. We also teach you to make some ganache of your own that you take home as well. Bringing your own ingredients won’t work with our format. If you need accommodation for dairy free we can do that for you but it has to happen in advance. There is a $25 fee if needed which can be paid directly on class day.

Hi Amanda, No- our usual materials include local Hudson Valley heavy cream in the ganache. We can make a dairy free version for guests which requires advance notice & an additional fee of $25 to help offset the additional labor. Hope that helps! Roni-Sue

Just amazing. The class was fun, informative and just all around great. Also we took home a bunch of treats. I would recommend this class to anyone that likes chocolate. The teacher really has passion about chocolate and it shows in the teaching.

Class was so awesome! Learned so much about chocolate. Rhonda was an amazing teacher and instructor. She had so many "insider tips" on making truffles, and on the chocolate industry in general. Class was very conversational, and Rhonda answered a lot of our questions about chocolate. 100% recommend this class. Perfect for any chocolate lover.
