Melanie is a culinary teacher, recipe developer, storyteller. She ran a cooking school for some years. She developed recipes for food corporations: the 5-easy-step recipes you found on the back of boxes and labels. She worked on developing flavors for an instant ramen noodle company.

    We divided into teams so not everyone learned every skill. Seems like this teacher (while good, friendly, passionate) was a last minute substitute.

    Good class overall, the only real issue is that we were kind of rushed at the end. I was also hoping that the recipes would be a little bit more advanced.

    I loved the course and our instructor Melanie was fantastic. it was fun to make all the food and have a potluck-style dinner at the end of the class. Unfortunately, I wound up getting food poisoning later that night... I don't think this was by any means the fault of my instructor or ICE. It was likely because of careless cross contamination between the raw eggs or raw meat and something else we had prepared, but it definitely put a damper on the experience.
