Zac Overman is the head bartender at Fort Defiance in Red Hook, Brooklyn, where he created and curates The Sunken Harbor Club, a weekly pop-up tiki bar featuring original and classic tropical cocktails. Prior to working at Fort Defiance, he could be found behind the bar at Manhattan's Frankies 570 Spuntino and Vandaag.

He is a graduate of the prestigious BAR 5 Day Program and is certified BAR ready. He is also a member of the back of house team for the Ultimate Beverage Challenge events and a cocktail and spirits instructor at Chelsea Wine Vault.
