Butchery 101 & Sausage Making offers students the opportunity to learn the ancient art form of butchery in a unique commercial kitchen setting. Led by an expert instructor, this course includes all tools and supplies and even offers refreshments and small bites during class. Located in the Central District by Pratt Fine Arts Center, this class is centrally located at the Melding Pot.

Primal Cuts 101 (Pork) is also hosted by the Melding Pot and emphasizes the culinary side of butchery. Students will learn recipes, proper casings to buy and use, and how to make the best cuts. A glass of wine or beer and small bites are provided, and each student will take home a collection of fresh cuts (so bring a few gallon zip-lock bags with you). 

Rain Shadow Meats hosts a half-hog demonstration that’s open to all levels. Students will learn how to break down and prepare half a hog, as well as the differences between cuts like chops, roasts, and braising cuts. There will also be a discussion on the anatomy of the animal and the farming practices of Tails and Trotters, Rain Shadow Meats’ farm. (Salumi and beer are provided, so come hungry and ready to learn!) Located in Capitol Hill, Rain Shadow Meats’ mission is to bring back the local neighborhood butcher with an emphasis on whole animal butchery, education, and the creation of community.

Virtual Butchery Classes 

Do in-person classes not work for your schedule? Online butchery classes may be a better fit! You can attend virtual classes from wherever you want and, with on-demand offerings, you can choose when you attend as well. You’ll also practice cooking techniques like braising, roasting, and sauteing. Students will be given a recipe packet, equipment list, and class syllabus upon registering. 

Similarly, Virtual Building Blocks: Fish Butchery and Cookery is also offered by The Chopping Block Lincoln Square. Designed for both beginners and more experienced cooks, this class will cover selecting fish, identifying flat and round fish, how to break down a whole fish, and various cooking methods. Also hosted via Zoom, a moderator will make sure that all your questions are answered by the chef either during or after class.
