Miette means, "little crumb" in French. This name was chosen while giving cooking classes at the restaurant Tartine in the West Village. Since Tartine means "slice of bread" we thought it an appropriate name for the school!

This class was wonderful! Very hands-on, and I learned more about cooking than just knife skills. I also loved Chef Paul's cooking style - very healthy and simple - food I will actually make again. In fact, it's currently one day later and I've already made one of the dishes again at home!

Chef Paul hosted a wonderful cooking class for a work event that I was hosting. He was welcoming, knowledgeable and fun to learn from. Everyone had rave reviews and we were so impressed with the amount of dishes we were able to make and enjoy in a single evening. There was some prep work done but we did feel like we were doing a lot of the cooking ourselves, which was a perfect balance. I highly recommend Miette.

We learned SO MUCH - I cook a lot and learned amazing tips - how to make red wine vinegar - what knives to buy and how to treat them well - how to make vanilla extract - we travel together on a girl trip yearly and will be back next November - have already recommended your class to everyone!!

We had such a blast! Chef Paul was amazing and so knowledgable! We’re were able to learn so much in a short amount of time, leaving well fed, well educated, and feeling like the class was worth the time and money. We will definitely be looking for more classes held by Chef Paul! He did an awesome job!
