What you'll learn in this cooking techniques class:

The class offers the surest way for adding more vegetables to your daily regime. We'll help demystify all the different vegetation available at the supermarket and then teach you how to cook it so you enjoy every forkful.

  • Blanching: Broccoli Rabe with Garlic; String Beans Gremolata
  • Roasting: Roasted Potatoes & Fennel, Roasted Beets, Roasted Butternut Squash Puree
  • Quick Pickling: Radishes, Cucumbers, Red Onions
  • Working with Leafy Greens: Rainbow Chard with Garlic, Raisins, and Lemon

School Notes:
You’ll receive a complete recipe packet and enjoy a full sit-down meal at the end of class with your classmates. Our classes are BYOB, and you are welcome to bring a bottle to share at the sit-down meal.

Our classes are hands-on, coupled with demonstration-style teaching. Everyone is situated at their own cutting board/chef’s knife station around a large wooden worktable that accommodates the whole class (10 people max). We work together as a group, with the chef at the head of the table.

We focus on knife skills, preparing ingredients for cooking, and we strive to find every opportunity to offer you a hands-on experience at the stove and at your station, all within the spacial parameters of a single stove/family-style kitchen. We ask for volunteers to assist in all cooking.

Refund Policy
We have a firm 48-hour cancellation policy to ensure that we have enough time to re-fill your seat with another student. For cancellations prior to the 48-hour mark, we are happy to offer credit for a future class.

While it is not in our nature to say no, we are not able to offer credit/refund for last-minute illnesses or work-related conflicts. However, you are always welcome to send someone in your place, because we understand these things do happen.

Erica is the best! She makes the class fun and funny and so flowy! We had such incredibly delicious cooked vegetables. I came out with a different appreciation for cooking vegetables 5 different ways.

I attended this class as someone who does cook regularly and has made cool things very occasionally, but was not confident in my knife skills and wanted to try improving or learning new skills with someone who was able to check my work. This class was that and much more! Erica was funny, friendly, attentive (she does pay attention to how you cut, even when there's 7 of you!) and easily answered all of my questions. I'm a cheap person but I honestly felt this was worth the money and you learn so much (and you get to eat!!). And the format was very friendly-- I can see how it's a good way to meet new people. Anyway, highly recommend.

it would be a 5+-star review if we received the recipes the instructor said he would be sending. Everything was delicious, and I hadn't worked with most of the vegetables we prepared. I had a great time.

I totally enjoyed my experience learning from John. I felt at ease in the small class environment and had the chance to ask questions. I was floored from how simple the techniques were. I highly recommend this class!
