From the classroom, Beth Ann headed down to the caves for an affinage internship and then began slinging cheese with the best of them at our Grand Central counter. When Beth Ann's not coordinating cheese plates for restaurants across the U.S., you can find her in the classroom expounding on her favorite cheese to pair with an earthy red or citric white wine.
